If you have a smaller appetite, this recipe may give you three servings...you could easily double it for meal prep! It will keep well for the week - but you want to store the caramel apples separately from the oatmeal for best flavour. Otherwise, the oats kind of suck up the flavour and it loses a bit of it's WOW effect :)
