30 Minute Shaved Tofu Sandwich with Balsamic Onions

This tofu sandwich is SO flavourful and satisfying, it’s dinner worthy! Layered with thinly shaved smoked tofu and tangy maple balsamic red onions, it’s a simple protein and fibre-packed plant-based meal in 30 minutes flat.

  • mandolin or just a cheese slicer or sharp knife!

Ingredients

Maple Balsamic Onions

  • 1 tablespoon extra virgin olive oil
  • 1 medium red onion thinly sliced into half moons
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon maple syrup
  • ¼ teaspoon salt plus more for serving
  • freshly cracked pepper

Sandwich assembly

  • 1 package smoked tofu or marinated tofu, thinly shaved with a cheese slicer or mandolin
  • 4 slices sprouted grain or whole grain bread gluten free if needed, toasted crisp!
  • ½ cup semi-firm vegan cheese or vegan cream cheese, choose your fave
  • 1 handful baby arugula or any other baby greens

Instructions

  • Start by making the onions...warm the oil in a medium skillet over medium heat and add the thinly sliced onions. Stir occasionally, until onions are softened and golden, about 12-14 minutes.
  • Turn heat to medium low. Add the balsamic, maple, salt and pepper and stir until the liquid is mostly absorbed - you want saucy, not drippy! - about 2-3 minutes. Remove from heat.
  • Toast your bread if you haven't already, and spread each slice with a bit (or a lot!) of the vegan cheese. Divide the tofu, arugula and onions between the two sandwiches and season with extra salt and pepper. Enjoy!
