Ingredients

  • 2 14 ounce cans white beans I prefer butter beans or black eyed peas
  • ¼ cup thinly sliced red onion about ¼ small onion
  • 2 cloves garlic micro grated or crushed
  • ½ packed cup curly parsley
  • ½ cup pitted Castelvetrano olives sliced or torn with fingers
  • 1 batch Fresh Lemon Dijon Vinaigrette

Instructions

  • Combine ½ the dressing, garlic and onion in the bottom of a salad bowl, while you prep the rest of the ingredients.
  • Add the white beans, parsley and olives to the salad bowl, toss, and let marinate for at least 30 min. Taste and drizzle with as much of the remaining dressing as you like!
  • Extra dressing helps to refresh the leftover bean salad as it can suck up the dressing!
