Summer Watermelon Salad with Crumbled Vegan Feta

This juicy watermelon salad, with paper thin slices of red onion and fresh mint, tastes like summer! Easy to double for a crowd, make it in minutes with storebought vegan feta (or my protein-packed homemade tofu feta if you have time!)

4 cups cubed watermelon keep cubes to 1 inch (2.5 cm) ½ cup vegan feta cheese crumbled ¼ cup sliced red onion slice it paper thin! ¼ cup mint leaves sliced ½ lime juiced 1 tablespoon extra virgin olive oil pinch salt don't be stingy!
Arrange the watermelon, onion, mint and feta in a shallow salad bowl.
Drizzle with olive oil, lime juice and sprinkle with a good pinch of salt, flaky if you have it!
