Ingredients

  • 4 cups shredded green cabbage I like to use Savoy
  • 2 cups snap peas thinly sliced on the diagonal
  • 1 14 oz can chickpeas drained and rinsed, skip for low FODMAP
  • 2 green onions dark green tops only, thinly sliced
  • 1 batch vegan green goddess dressing although I highly recommend a double batch if you'll have leftovers!

Instructions

  • Place the cabbage, snap peas, green onions and chickpeas in a bowl and toss well with the green goddess dressing.
  • This salad keeps well, and the flavour gets better if you let it sit at least 15 minutes before serving!

Notes

Low FODMAP notes: Snap peas and savoy cabbage are both low FODMAP in a ¾ cup serving. So if you stick to a cup of salad as a side dish, minus the chickpeas, it’s good for a low FODMAP diet.
And technically, you could actually add the chickpeas and keep it low FODMAP. 1/4 cup chickpeas is a low FODMAP serving!!

Also, if you want to serve this as a main dish salad with a protein, you'll be able to serve 4 people.
