Ingredients

  • 1 cup roasted beets finely chopped, or precooked beets
  • ½ cup Greek-style vegan yogurt
  • ¼ cup walnut halves chopped
  • teaspoon caraway seeds lightly crushed
  • flaky salt to taste
  • freshly cracked pepper to taste

Instructions

  • Stir beets, yogurt and caraway seeds together and season to taste. You can eat this right away but flavours will improve as it sits...you can even make this the night before!
  • Top with walnut halves and serve with a slice of whole grain toast if desired.
