Equipment

  • immersion blender bullet blender, or just a whisk and a strong arm!

Ingredients

  • 1 cup unsweetened soy milk sub hemp milk for low FODMAP
  • 2 tablespoons natural peanut butter
  • 1 tablespoon maple syrup
  • ⅛ tsp almond extract
  • ⅛ tsp cinnamon
  • pinch salt
  • ⅓ cup rolled oats
  • 2 tablespoons chia seeds
  • 1 tablespoon mini chocolate chips
  • 1 tablespoon finely chopped walnuts optional, if you're a walnut in your cookie person!

Instructions

  • Blend the soy milk, peanut butter, maple, almond extract, cinnamon and salt in a bullet blender or using an immersion blender.
  • Add rolled oats, chia seeds and mini chocolate chips to a 500ml jar.
  • All of my overnight oats have a more fluid texture because I don't like them super thick. If you like thick overnight oats, use 3 tbsp chia seeds OR increase oats to 1/2 cup.
  • Pour in the liquid and stir well. Wait one minute, and stir again to help minimize chia seed clumping.

Notes

I have a great homemade hemp milk recipe if you're looking for a low FODMAP high protein milk!
