High Protein Vanilla Almond Chia Pudding (without protein powder)

Get an energizing start with this salted vanilla almond chia pudding! It's got 17g of protein without any protein powder or Greek yogurt. It's a high fiber (16g!), protein-packed breakfast that's good for your gut and so delicious, you'll look forward to it!

Equipment

  • immersion blender or bullet blender, or a whisk and a strong arm!

Ingredients

  • 1 cup unsweetened soy milk
  • 2 tablespoons almond butter
  • 1 tablespoon maple syrup
  • 1 ½ teaspoons vanilla extract
  • 1/16 teaspoon salt half an ⅛ measure!
  • 3 tablespoons chia seeds

Instructions

  • In a bullet blender or blender jar with immersion blender, blend the milk, almond butter, vanilla, salt and maple syrup until smooth (you could whisk this by hand too)
  • Pour the milk into a 500mL mason jar and add the chia seeds. Stir, let sit for 5 minutes and then stir again, as chia has a tendency to clump and this will help it hydrate more evenly!
  • Pop it into the fridge and enjoy the next morning. Serve with some fruit.
