One of the weirdest things about being a dietitian on the internet is navigating the gap between how we think about nutrition and what good nutrition actually is.

Like how most of us are super focused on protein right now, which is important…just not as important as focusing on fiber. Because most of us actually eat enough protein. But like 95% of us do NOT eat enough fiber. Sorry, but it has to be said!

Which is why eating more plants is so powerful: plants are the only foods that contain both protein AND fiber together. Read that back, it bears repeating, ha.

So, I wanted to build you a high protein chia pudding that is the best of both worlds, because pairing protein + fiber is a winning combination for feeling full and satisfied. It’s a breakfast with a whopping 16g of fibre and 17g of protein, without protein powder for those who don’t want it. 

And it’s a creamy, delicious chia pudding base you can add your favourite protein powder to, if you’ve got higher protein needs. Vanilla or salted caramel would be an amazing flavour option.

How to make this higher protein chia pudding recipe your own

This is a traditional-style chia pudding, where we blend the creamy base and then stir in the chia seeds. I highly recommend adding some diced pear, peach or blueberries for a nourishing, balanced breakfast. If you really want to take it over the top, you could even drizzle on some of my cashew cream fruit dip (yes, really!) for another layer of flavour and decadence. I may be a dietitian, but I’m a firm believer that healthy food should be so good, you crave it.

Fun variation: if you want pudding cup for breakfast vibes, you can totally blend the chia seeds with the base so it’s smooth and creamy!

High Protein Vanilla Almond Chia Pudding (without protein powder)

Get an energizing start with this salted vanilla almond chia pudding! It's got 17g of protein without any protein powder or Greek yogurt. It's a high fiber (16g!), protein-packed breakfast that's good for your gut and so delicious, you'll look forward to it!

Ingredients

  • 1 cup unsweetened soy milk
  • 2 tablespoons almond butter
  • 1 tablespoon maple syrup
  • 1 ½ teaspoons vanilla extract
  • 1/16 teaspoon salt, half an ⅛ measure!
  • 3 tablespoons chia seeds

Equipment

  • immersion blender or bullet blender, or a whisk and a strong arm!

Instructions 

  • In a bullet blender or blender jar with immersion blender, blend the milk, almond butter, vanilla, salt and maple syrup until smooth (you could whisk this by hand too)
  • Pour the milk into a 500mL mason jar and add the chia seeds. Stir, let sit for 5 minutes and then stir again, as chia has a tendency to clump and this will help it hydrate more evenly!
  • Pop it into the fridge and enjoy the next morning. Serve with some fruit.
