Butternut squash

There is nothing cozier than butternut squash, and it’s a great nutrition boost to any meal. High in vitamin A carotenoid beta-carotene to help support healthy skin and immunity, 1/2 cup of cooked butternut also contains beta-cryptoxanthin, an antioxidant, as well as trace amounts of minerals of calcium and iron as well as 300 mg of heart healthy potassium. 

Butternut squash is as delicious in this vegan butternut squash and kale salad as it is folded into black bean tostadas for a cozy, comforting meal!
