I have been vegan for almost a decade now, and I have to give credit where credit is due: cashews were the unlock to loving plant-based food for me. Because I’m obsessed with creamy textures, and cashews make it so good, and so easy.

Buuuuuuut… even as a cashew fan, I forget that cashew butter exists sometimes. The texture is so silky, and it’s gently savoury in a much milder way than peanut butter so it’s versatile. I love it in smoothies, on toast and well, as a salad dressing. 

And this cashew lime dressing is soooooo good. It manages to be creamy yet light, fresh yet savoury all at once. It’s not the kind of salad dressing that takes over a salad. It enhances it.

I created this cashew butter salad dressing for my snap pea salad (absolutely one of the most underrated salads on this blog ha) and it’s so good I really wanted to give it its own space here.

Here’s how I make a creamy cashew dressing from cashew butter!

Yep, this is a cashew dressing that you don’t need a high speed blender for because it’s NOT made from raw cashews. No soaking. No waiting. Cashew butter makes it possible, with a greater depth of flavour than raw cashews.

It takes 5 minutes to whip up and it works with all kinds of greens, from lettuces to kale to even as a drizzle for roasted veggies! Make it sweeter or more savoury, depending on how much maple syrup you use. Just try it…you won’t regret it!

Creamy Cashew Dressing with Ginger and Lime

Wake up your salads with this creamy cashew lime salad dressing. Made with cashew butter, not cashews, it’s blended with fresh lime juice, bright ginger and sesame oil for a layered yet overpowering flavour that goes with all sorts of greens.

Ingredients

  • ¼ cup cashew butter
  • ¼ cup fresh lime juice
  • 2 tablespoons water
  • 4 teaspoons freshly grated ginger
  • 2 teaspoons sesame oil
  • 2 teaspoons maple syrup, or more to taste
  • ½ teaspoon salt
  • dried chile flakes, to taste

Equipment

  • Immersion blender or Bullet Blender

Instructions 

  • Place all ingredients in a blending cup or bullet blender. Blend on high until silky smooth, about 60 seconds. Taste and adjust salt, lime or maple to your tastes.
