Every few months, I ask the community what kind of recipes they want to see over on Instagram…and a few people mentioned they’d like a few more blender juices, since they love my green blender juice so much. So, I’m starting with beets. Yes, beets!
Red beet juice is actually so good for you, and we have the research to prove it. This juice is loaded with antioxidant and anti-inflammatory phytochemicals while also helping promote healthy blood pressure and even athletic performance. A cup of this, and one of my banana bran muffins, is a seriously nutrient-dense on the go breakfast.
And buying beet juice can be pricey…but beets aren’t. So making your own beet juice in the blender is a more affordable (and easy!) way to get more of these super foods into your life.

How to make raw beet juice actually taste good
I took a peek around the internet and saw that a lot of the “beet” juice recipes were actually packed with more fruit than beet, which they do to make it sweeter, so I thought you might need a recipe for a straight up red beet blender juice. Especially if you need to keep your blood sugars in check!

So why add ginger? Two reasons, one if you’re drinking beet juice for inflammation, ginger is anti-inflammatory too…but also, beets are quite earthy in flavour and I think that the ginger helps brighten the flavour and tone down the earthiness so it’s more delicious. Again, you control the dose here (don’t go overboard, it’s powerful!)
I’m gonna level with you: beet juice can be a kind of intense experience if you get it wrong. Trust me, I played around with this recipe for a while and the first couple of times it was so powerful I couldn’t drink it without diluting it!
So be sure to follow the recipe ratios exactly, and for less earthiness, use small beets as they tend to be sweeter than the big, woody ones. Plus, you can adjust the strength of the juice yourself, making it lighter or stronger, depending on your preference.
Nutrition Corner: I’m seeing other blogs talk about beets being high in iron, while also using very little beet in their juice! Beets only have about 0.8mg of iron per 100g. So if you use ½ pound of beets, this juice will have about 1mg iron per serving. And if you are on a low oxalate diet, dietitian me needs to remind you that this beet juice is likely too high in oxalate for you!
