I’ve been cooking for a looooooong time…and something I’ve learned is that a really good meal always has a contrast of flavours and textures. Something crunchy, something tender. A little creamy, salty, and fresh. It’s that balance that makes your senses come alive.
And some meals really scream out for a simple, cooling, refreshing side salad. So consider this herby cucumber radish salad your go-to in those moments. It’s loaded with fresh herbs – parsley, mint and dill – and a tangy lemon dijon dressing that’s practically drinkable.
This cucumber and radish salad takes no time at all and it’s just as good with my kidney bean burger as it is with tofu skewers. Plus, if you have a garden, it’s gonna help you use up all those radishes and cucumbers that sprout up out of nowhere and beg to be eaten IMMEDIATELY. I got you!

How to whip up this radish cucumber salad in 15 minutes
One thing I love about this salad is that you’ve got options. I love how pretty the thinly sliced veg looks, but if you want to lean into crunch, you could quarter the radishes and dice the cucumber!

Pssst…I’ll put on my dietitian hat to remind you that fresh herbs aren’t just flavourful, they’re actually packed with antioxidant phytochemicals too! Don’t be stingy.

A note about seasoning: when I was testing this recipe, I tried salting the radishes first which was SO delicious but honestly, I really missed the crispness. All about that balance, am I right??
The fix? I decreased the sugar in my lemon dijon dressing to make it tangier. Dress the salad right before serving and be generous!

Herby Cucumber Radish Salad with Lemony Dressing
Ingredients
- 1 bunch radishes, about 8-10 fat radishes
- 8 inch piece English cucumber, or 2-3 Persian cucumbers
- 1 cup flat leaf parsley, finely chopped
- ½ cup fresh mint leaves, finely chopped
- ½ cup fresh dill, fronds and tender stems, finely chopped
- 1 batch Fresh Lemon Dijon Vinaigrette
- 2 tablespoons salted sunflower seeds, optional, for extra crunch!
Equipment
- mandolin totally optional!
Instructions
- Trim and thinly slice the radishes and cucumber with a knife or a mandolin. The thinner you slice, the less crunchy the salad will be.
- Place the cucumber and radish in a serving bowl with the fresh herbs and toss. Sprinkle with sunflower seeds, if using.
- Drizzle generously with dressing right before serving so the salad doesn't go soggy, or serve dressing on the side.
