I love this blueberry + beet smoothie as a pre-workout breakfast because the 10 grams of blended fiber is easier on the gut, the ginger helps with digestion and the 14 grams of protein makes it a blood sugar smart choice for sustained energy. Plus, beets are especially good for blood flow preworkout.
But obviously, this gorgeous little vegan smoothie makes a great snack when you feel like you haven’t had enough fruit and veg too. And if you need a bit more to round out the meal, a couple of my chocolate protein balls will add 10g protein!

A couple of tips to ensure you actually love this blueberry beet smoothie
Beets…in a smoothie?!? Raw beet is decidedly, ahem, earthy. So if you want your beet smoothie to taste delicious and not like, well, dirt, there are a couple of things you need to know: the first, is don’t get all more is more with your beet. You want a small beet, so you don’t upset the balance of beet to sweet elements in the smoothie.

And I know not everyone likes banana, so this smoothie gets its sweetness from berries, dates and my secret weapons: vanilla and cinnamon. Vanilla and cinnamon both give the illusion of sweetness without extra sugar AND cinnamon helps mask off tastes from the beet. Don’t skip them!

Blueberry Beet Smoothie with Ginger (10g fiber!)
Ingredients
- 1 cup soy milk, or other high protein milk
- 1 cup frozen blueberries
- 2 inch diameter beet, peeled, trimmed, roughly chopped
- 1 tablespoon almond butter
- 1 inch piece ginger, peeled, don't overdo it!
- 1 teaspoon vanilla
- ¼ teaspoon cinnamon
- 1 medjool date, or 2, to your taste!
Equipment
- High Speed Blender essential to liquify the beet!
Instructions
- Place all the ingredients in a high speed blender and blend on high until silky smooth, about 60 seconds.
