I LOVE green juice…there are few things you can eat that just make you feel so good, almost instantly. Feeling sluggish? This easy green juice recipe will fix you up, better than coffee ever could!
It’s hydrating, of course, because dehydration can lead to fatigue and even, ugh, constipation. And because we’re blending, not juicing, you haven’t lost any of the valuable fibre that helps keep your gut happy!
But, this green blender juice also makes it really easy to pack in a lot of vegetables so you can get a near instant boost of vitamins, minerals, antioxidants and anti-inflammatory phytochemicals to help your body do its thing.
As a dietitian, I am all about positive, additive plant-based nutrition. Your health is determined more by what you actually eat than by what you leave out. And there are SO many health benefits to adding a green blender juice to your life! Plus, making green juice yourself is also WAY more affordable (and fresher) than buying it.
So let’s free poor green juice of its association with crusty detoxes where everything tastes like despair and embrace the fresh, energizing and bright flavour of my go-to green juice, which I originally created for Good For Your Gut Cookbook. I’ve been drinking this exact green blender juice for a few years now, whenever I need a little boost!
Also hot tip: a green juice is NOT a meal. It’s something to be sipped alongside a meal, like my 5 minute chickpea scramble, or or as a healthy snack, okay?? Green juice doesn’t have healthy fats or plant-based protein, so it’s not balanced enough to be a standalone meal.
How to make an affordable, energizing green blender juice at home
Get out your blenders, team!! I have never owned a juicer, in part because I have a tiny kitchen and every tool I add to it needs to pull its weight…but also because I HATE cleaning a juicer.

In case you were wondering, I did not choose these ingredients randomly. Each serves a purpose! Celery is rich in electrolytes, while the ginger stimulates stomach emptying to settle the stomach. Parsley is highly underrated as a green leafy vegetable; it’s inexpensive, surprisingly nutritious and not at all bitter. With plenty of vitamins A, C and K and anti-inflammatory carotenoids and flavonoids it’s a really great way to get more green power into your life.
Why make green juice in a blender?
I really like fibre…so I’d much rather make my green juice in my trusty high-speed blender so I don’t throw away all the fibre. And it is SO easy to make a juice in the blender!
You could strain it through a nut milk bag or fine mesh strainer…but I never do, so I keep all that valuable fiber. That fiber means the juice gets a little thicker as it chills, but I don’t mind. You can shake up with a bit of extra water if you want it thinner!
How to make any green juice taste better
Take it from someone who loves to eat and writes cookbooks for a living…I’m not one of those people who will just knock back a juice or smoothie even if it tastes bad.
It has to taste good…or what’s the point? Of course, everyone’s taste buds are different. So I want to arm you with the tools you need to adjust your juices so they suit your taste.
- Tastes a bit dull? Try a tiny pinch of salt…yes salt! I don’t usually add it to this juice as celery contains sodium, but adding a little pinch of salt to juices or smoothies enhances flavours (and won’t make them taste salty!)
- Want it a bit sweeter or need to balance out bitterness? Sugar neutralizes bitterness. Add an apple, a peeled orange or even a ½ cup of orange juice.
- Taste is a bit bitter, flat, or ‘muddy’? Acidity brightens flavours…which is why I add a slice of lemon, peel and all! It’s the secret to a bright, refreshing green juice without any trace of bitterness or earthiness. You can also just add a squeeze of lemon juice if you prefer.
Tips, Tricks and Substitutions
- Low FODMAP? Omit celery, skip apple and add more cucumber!
- Really, you can use any greens you have on hand..it will change the flavour a bit but you can always adjust it with the tips above! Try substituting spinach or kale for parsley.
- Bonus: you can totally make popsicles out of this juice for a nourishing hot weather refresher.

5 Minute Green Blender Juice
Ingredients
- 2 cups water
- 2 large stalks celery, trimmed and roughly chopped
- 1 packed cup curly parsley, leaves and stems
- 4 inch piece cucumber, skin on
- ½ lemon, skin on, end trimmed
- 1 inch piece ginger, peeled
Optional, for sweetness
- 1 medium apple, quartered and seeded, i like gala or ambrosia (NOT Low FODMAP!)
Equipment
- High Speed Blender
Instructions
- Place water, celery, parsley, cucumber, lemon and ginger in a blender. If you want a touch of sweetness, add the apple.
- Blend on high until liquified, about a minute. Divide among two tall glasses and serve, or place in a one quart (1 litre) mason jar and refrigerate for up to three or four days.

Love that this is a green juice that’s not complicated but also customisable. I think some watermelon and/or mint could be extra refreshing for a summer juice.
I notice you always use curly parsley in your recipes and I’ve always wondered if there’s any added nutritional benefit vs Italian parsley, or is it just a matter of taste preference?

Hi Leela, ooh yes, watermelon mint could be fun! And as for curly parsley, it’s a bit “zippier” than Italian but 100% Italian is also a good choice.

When I was working from home during Covid, I made a point of making green juice every afternoon as a pick me up. Now that I’m back in the office I really miss them. Do you know if this recipe would still taste ok if I made it in the morning and saved it for the afternoon?

I’ve made something similar to this and love it! I’ve never tried parsley in it before and look forward to trying it out. I really enjoy green juice but like you, really dislike cleaning the juicer. I sooo needed this tip to slip in extra greens, especially in the winter seasons when cold salads don’t seem to have an appeal. Years back I used to juice. It tasted yummy and I felt great. But I couldn’t rationalize all that pulp waste, from organic produce no less. I’m going to try to blend recipe instead. And add in a lemon too!

To really make this juice-like, yes. If you chop the celery, finely grate the ginger and juice the lemon, a regular blender will do it as parsley blends really easily compared to something like kale.
I got a good laugh out of this line “crusty detoxes where everything tastes like despair” ! And also didn’t think about making juices without a blender, just added celery and parsley to the grocery list! Thank you!
